Start with the honest answer

The best escape depends on what the city has taken out of you.

For the easiest coast reset, choose the Central Coast; for the full white-sand weekend, Jervis Bay. The Blue Mountains bring the strongest walks, Port Stephens adds harbour and headlands, and Newcastle combines a real city with the beach. Choose Kangaroo Valley for quiet country, the Southern Highlands for villages, the Hunter for classic wine country, or Orange when food and cool-climate wine justify the longer drive.
